The Haunted Mansion

The Haunted Mansion has a couple of renditions now but I saw the Muppets one on Disney+ and thought it would be fun to do this as a theme. It was super cute and funny and since it wasn’t long we watched the other one with Eddie Murphy after. I think they enjoyed both of the movies, but it mostly just made us want to go to Disneyland and ride the ride!




We had fun with this themed dinner with the girls helping with the dessert, which I will go into later. There are so many memorable parts of the ride (that are also in the movies), but the grave yard with the singing busts always stands out the most. That’s as my inspiration for the dinner. We have a big tombstone cake pan and thought making a tombstone taco would be a good way to represent this. We used the phillsbury roll dough and placed it on the bottom of the pan, then added the taco meat (which I cooked separately), added the cheese and spelled out RIP with the olives. We then cooked it in the oven and had a tombstone taco! Turned out good and I knew the girls would eat it. Tyler also made his guacamole to finish the meal!






Our drink was Inspired by Madame Pigota (Miss Piggy) in the movie and her head as the crystal ball. The colors are magical greens and purple. We used the Butterly Pea Flower Tea again and it actually worked in our drink this time. We dyed the limeade, a little green and then added a drop or so of the tea to the drink and it in fact turned it purple this time. So we had a Madame Pigota Limeade with some vodka for the adults.




As I mentioned before the girls helped on the dessert for this one. We made for the first time meringues and ghost meringues even! Everyone was able to pipe the meringue and it was super fun! After they baked, we added the eyes with edible marker. These were then added to a delicious chocolate mousse. I have never made mousse either and thought it would be better than pudding and I was right! All of us wanted to lick the cups! All put together it was a graveyard with the ghosts, some crumbled up oreo, a couple of gummy worms and the mousse. One of the easiest, fun and delicious desserts to date!
