Encanto

I know I say this every time we watch a new Disney movie, but Disney did another great job with Encanto. My girls loved this movie and have watched it multiple times since then as well as listen to the music ALL the time. Lin-Manuel had another great one. The movie had family, love, conflict and as mentioned great music! I highly recommend but with how much the music is topping the charts, you have probably already seen it or at least heard the songs.




This movie is set in Columbia, so we researched popular foods for that region. We ended up on empanadas and decided to give making them from scratch a try. I am sure if we bought them they would have been much better, but it was fun making them with Kyrie. I got the corn flour, as well as, all the ingredients for the meat mixture. Kyrie helped chop and cook it all with just a little supervision. She honestly enjoyed the mixture so much that she kept eating it by itself. It was ground beef/pork with tomatoes, onion, cilantro and some seasonings. From there we made the corn flour dough, rolled out little sections and then stuffed the mixture inside. Later that evening we fried them, which was an experience in and of itself. We don’t own a deep fryer, so we had to use a pot of oil. The final result was good, but the girls didn’t like the corn dough.



For the drink, we decided on a local Columbian drink as well. It was a mixture of strawberries, vanilla ice cream and coconut milk. It was similar to a smoothie and the girls loved it!

We left this non-alcoholic as Tyler and I were doing dry January, but I am sure you can easily add something to this.



While Kyrie helped with the empanadas, Juliet helped with our Tres Leche Cake. It was very simple to make and Jules did most of it. She enjoyed separating the egg whites from the yolks and beating those. The whipped egg whites created a very spongy cake and once that was baked, we mixed together and added the 3 milks: condensed, evaporated and whole milk. This mixture then gets poured into the cake and soaks for about three hours. While that was soaking, we made the whipped creamy frosting. Then that gets added to the top of the cake. We sprinkled some cinnamon to finish it off! It was delicious, definitely a little wet. I could have omitted some of the three milk mixture. The cake was even better the next day and the next! We ate all of this one up. I highly recommend making this at least once in your life.
